THE EEL, WHERE IS ONE OF THE CHRISTMAS DISHES WORKED FOR EXCELLENCE?
The most important moment is lived in the hall of fires, with 12 large fireplaces that work at full speed to cook spit eels before being marinated, with a technique that has remained unchanged over time. All this takes place from the beginning of the twentieth century at the Manifattura dei Marinati of Comacchio, a symbolic place of work and tradition of these unique territories in the world.
The Manifattura dei Marinati, which stands behind a splendid porch from the 1600s made up of 143 arches, has always been a place closely linked to fishing and the happy intuition of over a century ago to bring together the entire cycle of processing of eels and aquadelle that was previously carried out by many individuals.
Eel is a traditional Christmas dish, in many variations - such as risotto - that can be discovered and appreciated especially in traditional restaurants in Comacchio
